Recipe: My Rocky Road Cherry Icecream!

We had the wonderful opportunity to pick cherries at a friend's orchard. We came home with LOTS of cherries and had a really nice day, pitting them and thinking what to make with them all.

In amongst lots of jam making, champagne and wine making and some eating, eating, eating of fresh cherries, I decided to make up my own recipe for rocky road (with cherries!) icecream. Here is the recipe if you want to give it a try! It was DELICIOUS!!




Sara's Homemade Rocky Road Icecream

400g fresh pitted cherries, chopped
Half a packet (about 200g) of Choc Ripple biscuits, crushed (choc cookies)
4 litres of plain vanilla icecream, softened (homemade or store bought, your choice)
1 packet of clinkers chocolates, crushed
Half a packet (about 150g) of marshmallows

1. Take icecream out of the freezer and allow to soften on the bench. If you are making it from stratch, follow your icecream maker's recipe for vanilla icecream. Make sure you have around 4 litres, otherwise adjust the recipe accordingly.
2. Crush biscuits in a food processor until chunky. Set aside. (*OR put in a plastic bag and use the flat side of a meat tenderiser until chunky!).
3. Crush clinkers in a food processor until chunky. Set aside. (* OR as above!)
4. Cut marshmallows in halves. Set aside.
5. Pit and chop cherries. Set aside.
6. When icecream has softened, pour it into a very large kitchen bowl and stir in gently all the other ingredients. The icecream will go a deep pink/purple colour. You can add the cherries last and just stir to combine if you prefer the colour not to run as much.
7. Put it back in the freezer and wait until set. ENJOY!
